Аннотация: Исследованы изменения соотношения отдельных классов липидов и состава жирных кислот общих липидов мышечной ткани каспийского осетра во время его хранения при минус 18 гр. С и минус 30 гр. С в течение года. Пониженная температура (минус 30 гр. С) значительно замедляет гидролиз липидов и способствует сохранению биологически активных кислот. Таким образом, при такой температуре хранить рыбу предпочтительнее, чем при минус 18 гр. С./Changes in the ratio of certain lipids and composition of fatty acids of total lipids from the muscle tissue of the Caspian sturgeon during the storage at the temperatures of -18 degrees C and -30 degrees C were investigated for a year. It is ascertained that the hydrolysis of lipids is retarded and biologically-active acids are better preserved at the temperature of -30 degrees C. So this temperature is preferable for storage.
